Tomato (Super Food) Sauce - A Classic

Make this super-food sauce ahead and freeze in batches for use with Spaghetti Squash or Pita Pizzas! 1 kg fresh tomatoes

1 onion

2 cloves garlic

Bunch of fresh basil or other fresh herbs to taste

1 tbsp Olive oil


Warm olive oil on medium - low heat

add onion and sautee for 7 minutes or until translucent

add garlic and herbs and stir together until blanched

add chopped tomatoes and bring to boil

adjust heat to simmer for 30 - 40 minutes

stir occasionally until sauce is reduced and thick
