Sweet and Spicy Swee Potato Steak Fries

Sweet Potatoes, we will miss you!! Lots of good fibre and vitamins and anti-oxidants, we loved you baked, in soups and in any recipe calling for roasted vegetable medley. Sweet Potatoes are also a great filler ingredient for muffins and baked goods - we have to now put that away for next fall... but before we do, let's feature them one last time in a sweet and spicy recipe that uses a jewel box ingredient from the Sugar Shacks of the East Coast winter thaw: Maple Syrup!

2 Medium organic Sweet Potatoes

2 tbs safflower oil

1/4 tsp (to taste) cayenne powder

1.5 tsp Real Canadian Maple Syrup

1/2 tsp kosher salt


preheat oven to 400

Scrub and slice pottoes into 1/2 inch wedges

plce on large sheet pan w/2 ttsp cayenne

roast until golden (10 mins)

Toss with maple syrup and roast approx 5 mins more

Season to taste with salt
