Easy to make hearty lentil and spinach soup.
2 tbsp oil
2 tsp salt
2 carrots- diced
2 celery stalks- chopped
2 large onions- chopped
2 cups red lentils (dried)
8 cups water
4 cups shredded fresh spinach
1 tbsp tomato paste- mixed with ½ cup water or ½ cup tomato juice
2 tbsp vinegar (optional)
1. Cook onions, carrots, celery until soft with oil.
2. Add lentils and water, simmer 45 mins.
3. Add spinach and salt, cook 15 mins.
4. Add tomato mixture, cook 10 mins.
5. Add vinegar into pot.
Note: this soup freezes well
