This delicious lemony salad is chock full of fertility super foods, including avocado and olive oil, which have been shown to boost the chances of conceiving naturally and with IVF. Grill some organic free range chicken breasts or thighs or toss some salmon on the barbeque to make a complete meal. This is a perfect side dish to take to a barbeque now that summer finally seems to have arrived!

½ cup of quinoa
1 cup of water or vegetable broth
1 can garbanzo beans (drained and rinsed)
1 c. cherry tomatoes cut in half
2 avocados diced
2 C. spinach
1 bunch cilantro
1/4 C. sweet onion
2 small cloves garlic

For the dressing:
Juice of 2 lemons
Zest of 1 lemon
2 tsp. Dijon mustard
2 tsp. olive oil
Dash of salt and pepper


Make your quinoa first.  Put quinoa in a pot in the veggie broth or water (or use a rice cooker if you have one). Put the lid on the pot, turn on the heat to medium high, and let the quinoa come to a boil. Once it boils, reduce heat to medium/low and let the quinoa simmer. Stir every so often, and cook quinoa for about 20-25 minutes just until the liquid is absorbed.

 When it is done, set it aside. Make the rest of the salad by chopping up the rest of the veggies and combining dressing ingredients. Mix together when the quinoa has cooled down.
