Elegant Late Winter Pasta

Leeks are in season - they have a pretty, pale-green colour as the veggies become less starchy while winter winds down. Kale is a proven superfood, loaded with calcium and phyto-nutrients that are so dense in vitamins and good for us. Together, they combine to make a really pretty pasta dish for the end of the season.
Cooking time/temp: 
20 mins total - in one pot.

1 large leek - trimmed, washed and cut into chunks

2 - 6 garlic cloves (to taste)

2 large handfuls of kale

1/2 cup of best quality olive oil (it will affect the flavour)

2 cups dried pasta

1/2 cup of shaved parmesan


Set a large pot of water to boil

Boil leek and garlic for 3 minutes

Add kale and cook another 3 - 4 minutes

Using tongs or a slotted spoon, take veggies out of the water and keep to the side

Keep the water boiling and cook the pasta according to direction on the package

When pasta is cooked, drain it and put it back in the pot

Blend kale, leek and garlic in food processor - it will become a lovely fresh green colour - super healthy!

Mix green sauce with the pasta and serve topped with shaved parmesan
