Broccoli Soup

Need a Nourishing Soup to Kickstart a Healthy 2015?
Cooking time/temp: 
Total 15 minutes

1 litre stock of your choice (veggie, chicken or beef)

2 heads of chopped broccoli

2 eggs whisked

Add parmesan to taste

Salt and pepper to taste


Bring stock to boil

Add broccoli and simmer until tender

Slowly pour whisked eggs into simmering soup, stirring quickly.

Using an immersion blender, puree all ingredients.
