Asparagus Lemon Fries

Oven baked fries were a great idea whose time had definitely arrived and then we all fell in love with the sweet potato version. Since January has begun, let's shake it up with two fantastic items currently in season and available on the grocery shelves: asparagus and lemons! Time to turn this classic and good-for-you combo into a trending snack...
Cooking time/temp: 
15 mins at 350 (f)*

1 lb asparagus, trim the ends

2 lemons - squeeze out and keep all the juice

2 tbls olive oil

1 tbls garlic minced (optional)

2 -3 tbls parmesan

salt and pepper to taste



Wash asparagus and marinate in mix of lemon juice, olive oil, parmesan, garlic, salt and pepper for minimum 30 minutes or overnight in fridge. 

Preheat oven to 350 (f)* and lay asparagus on tin-foil lined baking sheet. Cook for 15 minutes or until slightly crispy. Can be dipped into balsamic glaze (or dip of your choice) and eaten as finger food!
