SHRIMP WITH SPRING MIX, AVOCADO, TOMATO AND SUNFLOWER SEED SPROUTS SANDWICH
Makes 2
4 slices of Sprouted Whole Grain Bread
4 tsp. mayonnaise OR
4 tsp. Earth Balance Buttery Spread
2 ounces of pre-cooked Shrimp
1 tomato, sliced
½ avocado, sliced
Handful of Spring Mix OR Romaine Lettuce
Handful of Sunflower seed sprouts
SPREAD cream cheese, quark or soy cream spread on slices of bread
LAYER with rest of ingredients
SERVE with carrot sticks and slices of zucchini or cucumber
Variations: Add a slice of cheese and grill sandwich stovetop or on a sandwich grill.
