SHRIMP AND LEMONGRASS SOUP
Gomashio is a traditional Macrobiotic seasoning made with sesame seeds and sea salt.
Wheat and Dairy Free
Serves 2 - 4
1 Tbsp. extra virgin olive oil
2 Tbsp. crushed garlic
1 medium white onion, diced
2 stalks lemongrass, lower part only, bruised
1 large carrot, finely chopped
8 shitake mushrooms, sliced
16 large shrimp, peeled and deveined
Organic vegetable or chicken stock
4 cups (950 ml) filtered water
Gamasio to garnish
In a large soup pot, over medium heat
SAUTÉ garlic, onions, carrots, shitake and lemongrass for 5 minutes
ADD shrimp and SAUTÉ another 3 minutes
DISSOLVE vegetable stock in the water
ADD stock to vegetable mixture and BRING to a boil
LOWER temperature and SIMMER for 10 minutes
REMOVE from heat
REMOVE lemongrass before serving
SERVE in individual bowls
SPRINKLE with Gomashio
