SAUTÉED ARAME AND SEASONAL VEGETABLES SALAD
Arame is the mildest of sea vegetable and supplies fiber, vitamins and minerals. The seaweeds dark strands goes well with seasonal vegetables and is great added to both soups and salads.
Wheat and Dairy Free
Serves 4
¾ cup (14 grams) dried arame,
1 Tbsp Sesame Oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 cups (240 ml) snow peas
1 cup (240 ml) green beans
1 cup (240 ml) zucchini
3 Tbsp wheat free Tamari
½ tsp. toasted sesame oil
2 tsp Gomashio
SOAK arame for 5 minutes in 2 cups of cold water then DRAIN
In a large skillet or wok, over medium heat
SAUTÉ onion and garlic in oil until tender
ADD seasonal vegetables and tamari
SAUTÉ until just tender
ADD drained Arame and SAUTÉ for 2 minutes
REMOVE from heat
GARNISH with Gomashio
SERVE warm or cooled over rice or by itself as a side dish
