ROASTED TURKEY BREAST WITH OLIVE OIL, GARLIC AND ROSEMARY
This makes a simple and tasty meal. Slice the turkey breast thinly across the grain and plate individually and serve on top of Quinoa Pilaf, Brown Rice or Couscous.
Wheat and Dairy Free
Serves 2 - 4
1 - 1 lb. (450 g) turkey breast, skin and boneless
Coarse salt, for seasoning
In a small bowl make a MIXTURE of
2 Tbsp. extra virgin olive oil
1 Tbsp. crushed garlic
1 Tbsp. fresh rosemary, finely chopped
PREHEAT oven to 350˚F (180˚C)
COVER both sides of turkey breast with oil and garlic mixture
SPRINKLE with coarse salt
PLACE on cookie sheet lined with parchment paper
BAKE in preheated oven for 40 minutes or until internal temperature has reached 170˚F (80˚C)
REMOVE from oven and
LET REST for 10 minutes before serving
