ROASTED BUTTERNUT SQUASH WITH CHIPOTLE SPICE
Roasted squash is high in beta-carotene and has a sweet and earthy flavour. You can substitute with other winter squashes and even use several different ones. Cut into equal cubes for even cooking. The Smoky Chipotle seasoning is best bought in a Grinder’s Mill (one brand name is Dean Jacob’s) and taste great on just about anything.
Cooked squash will last in the fridge for several days and taste great either warm or cold.
Wheat and Dairy Free
Serves 4
3 lbs (1.35 kg) butternut squash
4 Tbsp. extra virgin olive oil
Generous amount of Smoky Chipotle Seasoning
Preheat oven to 375˚F
PEEL the squash and cut in half lengthwise
SCOOP out the seeds from the center and DISCARD
CUT the squash into large even sized cubes
PLACE in large bowl and TOSS with olive oil
ADD Chipotle Spice
PLACE on parchment line sheet pan and BAKE for approximately 30 – 35 minutes
