Red Lentil Soup
Easy to make, hearty lentil and spinach soup.
Ingredient List & Amounts:
2 tbsp oil
2 tsp salt
2 carrots- diced
2 celery stalks- chopped
2 large onions- chopped
2 cups red lentils (dried)
8 cups water
4 cups shredded fresh spinach
1 tbsp tomato paste- mixed with ½ cup water or ½ cup tomato juice
2 tbsp vinegar (optional)
Instructions:
cook onions, carrots, celery until soft with oil.
Add lentils and water, simmer 45 mins
Add spinach and salt, cook 15 mins
Add tomato mixture- cook 10 mins
Add vinegar into pot
Notes:
this soup freezes well
