MOROCCAN LENTILS
Wheat and Dairy Free
Serves 4
4 cups filtered water
2 cups organic lentils, rinsed and picked over
1 large yellow onion, chopped coarsely
6 tbsp extra virgin olive oil plus
1 tsp sea salt
1 (14.5 ounces) can diced tomatoes
1 bunch fresh parsley, finely chopped
3 tbsp garlic, minced
1 large bay leaf
1 tsp cayenne
BRING water to boil.
ADD lentils, onion, half of the oil, and sea salt.
SIMMER mixture for 45 minutes over low heat and then
ADD the rest of the ingredients and
SIMMER for another 20 minutes.
REMOVE bay leaf before serving
